Chicken Burrito Bowl

Chicken Burrito Bowl
1lb chicken breast, diced
2 tbsp olive oil
¼ cup diced onion
1 cup uncooked rice
14.5 oz can diced tomatoes
15 oz can black beans
½ tsp garlic powder
½ tsp chili powder
1 tsp cumin
Salt & Pepper to taste
2 ½ cups chicken broth

Optional Toppings
Avocado
Jalepeno
Diced green onions
Sour cream
Guacamole
Mexican cheese

Saute onions in 1 tbsp olive oil until soft
Season chicken with salt and pepper add to pan and cook until done.
Move chicken to one side of pan, add 1 tbsp olive oil and saute uncooked rice 2 until it begins to turn golden brown.
Stir in black beans, tomatoes, chicken broth, garlic powder, chili powder and cumin.
Bring to simmer, cover and reduce heat to low.
Cook about 20 minutes or until rice is tender.
